I really want to try making a red velvet cake. I am wondering what flavours of frostings/fillings would go with this type of cake? Would it be nice with a fondant covering? I have the recipe from this site called 'Waldorf Astoria Red Velvet Cake', it calls for 2oz of red food colouring, does that mean liquid food colouring or the gel/past colouring used for decorating?

Hi Robyn! I love buttercream or cream cheese icing with my red velvet cake. I've never done a red velvet with fondant...but I think it would work just fine. When it calls for red food coloring, I always use the regular liquid coloring.

Yes, a red velvet cake does taste good with fondant; it tastes even better with white chocolate fondant.

That is so funny, I just came on to find out a good recipe for cream cheese icing, because I am going to do a "cloud" cake, but wanted a nice base icing under the "clouds". I didn't want to have to go to the store, but I think I will have to because I don't have enough 10x sugar. Dang! It's for MY birthday too!!! I'm going with cream cheese, because it is easier for me. But I think white chocolate would also be wonderful. Oh yeah, I am also doing the red velvet cake. Have fun.

Did you know that you can MAKE 10X sugar in the food processoer???

I wouldn't do it to totally sub what the recipe calls for, but if I am just filling in a cup or so I will.

powdered sugar = confectioner's sugar = icing sugar Substitutes: Mix 1 cup granulated sugar + 1 tablespoon corn starch in blender until powdery, stirring often OR (to sweeten whipped cream) artificial sweeteners (add after cream is completely whipped)

I just made my first RedVelvet Cake today. I don't even like Red Velvet but someone asked for it. So I made it but in cupcake tins with cream cheese frosting. I got both recipes from this site. I modified them both. The cake was from a mix. Everyone liked it. So I 'm okay but white chocolate sounds good. I thought of that today but went with cream cheese, icing really didn't taste alot like cream cheese.

Okay, here is what I will say about the red velvet cake that I made from this site. I liked the taste (never made one before) but it was a little dry. Wonder if it was something I did or a characteristic of the cake.

I also didn't make it "red" enough, because I didn't want to use that much food coloring, as my children are eating it, and they are sensitive to the Red and Yellow colorings. (Makes my son even MORE hyper). So it was more of a pink velvet cake.

The cream cheese icing recipe that I used tasted yummy!

I did a red velvet cake with crusting cream cheese frosting so I could decorate it for a party. it was very easy to use..the icing that is, iced just like buttercream and smoothed with viva paper towel. I used DH box for my red velvet that day b/c I was short on time and wanted no fail, no one was the wiser and the compliments were very nice.
