How flexable are all of you with "your" recipes? I had a request for a devil's food wedding cake. The bride was very concerned about the moistness and asked for a sample. I don't have a standard devil's food recipe so I tried several and took her the best. All of my tasters thought it was great, the bride did not. She felt it wasn't chocolaty, moist, or dense enough. It was so moist I had to freeze it in order to ice it! Long story short I did finially create something she liked. My tasters think it is good but too dense. I want the bride to be happy but how far do you go? I made a dozen cakes at my own exspence. Do you just have standard recipes and just say too bad?
yep, if they don't like it, I really don't go out of my way much anymore. Costs tooo much $ and is too much of the pain in the butt. You'll end up spending more $$ making those cakes which takes more profit out of the cake order. Which is $ out of your pocket.
Yup.. I have recipes I have tested and that I (and my family) like and that's what I use. I have a couple varieties of chocolate cake.. one that is more traditional and one that is ultra rich. You don't like them.. well I'm sorry.. them's my cakes.. ![]()
No way I'd try 12 different recipes to please one person. ((hugs))
I have my recipies that I am comfortable and happy to say yes they are mine. I have already done a lot of testing to see what I and most of my family like. And people outside my family have commented on my cakes/cookies and all other recipes I use so there is no question that I am happy with them.
I do have two chocolate varieties though. One is an everyday standard flavor and the other is called "Betty's Chocolate Cake" this is a specialty cake and is a family recipe. It taste different but I offer two options for taste. This is the only flavor so far that I have two different recipes for and will probably be the only one unless I come across another family recipe that I want to add to the list
If they don't like my cakes then they shouldn't be ordering from me. If they are searching for something specific then they should probably just make it themselves. (sounds harsh but I don't want to try to meet everyones taste or I would never make money trying to recipes and trying to please everyone)

If someone didn't like my cakes, I don't think I would make them any differently to suit them, especially when the consensus is that they are good.
i think she just wanted free cake and I bet that if you charged her...she would not have wanted 12 different cakes!

Exactly. You're a professional and you're selling tested goods, really. If she doesn't like what you sell, she can go somewhere else.
I only offer chocolate and white ... and though a couple people look at me and ask "Really?" I just answer "Yes." And they order one of the two ... never had someone not order a cake becasue of it.
Now, I have to amend that: A family that I am very close to used me for both of thier sons wedding cakes and then when thier daughter got married the only thing she requested was strawberry cake ... I am not a strawberry cake person but I felt like I could do the family a favor and make a strawberry cake ... NINE cakes later I finally found one that was sutible for a wedding cake. And I have to admit if I had to do it again I would ... I learned a very good lesson "Some brides are worth it" and "I don't offer strawberry cake!" If you learned something from it ... good! If the bride is appreciate ... well, that's why I love this job!
Thanks! I guess I need to spend some time perfecting and choosing the recipes I use. I love this wbsite. Looking throught the forums has taught me a lot of things I never even thought about.

That is the point of the tasting - they figure out if they like what you do. i would never in a million years make and remake and remake a cake (at my own expense no less) just to get ONE bride to like it. If they don't like what you do, then you aren't the right cake person for them. Let them move on.
