I need to make my daughter's cake in advance. Can I stack 3 cakes in advanced?. Would they sink? They will be covered in MMF. Thanks a lot for your help.

We have done them that far ahead at work....however we refrigerate them to keep them firm and fresh. I don't know that I'd let it sit out that long at room temp. As long as they are doweled/strawed and supported well it should be okay.

I personally would not stack it three days in advance. I would decorate each tier and stack on party day.

Well the cakes wouldn't sink as you would be using skewers and boards to separate the layers and that's what carries the weight. The cake shouldn't be a problem as the fondant seals the cake and doesn't let the air in.
