Okie Dokie...

This is sort of like a poll I thought I would come up with to see what you gals and guys like best for your cakes. I am a novice decorater and simply use straight cake box mixes and wilton buttercream icing. I have not ventured out from any cake flavors beyond french vanilla and devils food. Used only vanilla extract no others, and never used fondant, mmf, ganache, satin ice, fillings or anything. How do you come up with your combinations for icing and fillings, cake flavors etc.. What is the most practical (time,taste,price...)and best tasting? Who's ON???!!!!

I like white chocolate cake with regular cream cheese or white chocolate cream cheese.

I just use the bride's cake recipe from the cake mix doctor book and add melted white chocolate to the cake. I do the same if I want to put white chocolate in my cream cheese. It is oh sooo good.

At one point I was afraid to venture out and I kept making the same thing over and over again. Finally, I began to try new flavors but have not ventured to fillings just yet.

I plan to try more recipes to boost my clientel. icon_smile.gif

My favorite cakes are White Almond Sour Cream with Raspberry filling, carrot cake with cream cheese, strawberry cake with strawberry cream cheese filling and cream cheese icing, yellow cake with Chocolate Syrup Buttercream and Ganache over the top. The only thing I am not real crazy about it regular white buttercream icing. It's just my personal taste.

Where do you get your filling ideas from. Are they store bought or homeade? Do they require refridgeration?

I buy CK raspberry and strawberry. I bought some chocolate bavarian cream and did not care for it. I have gotten quite a few recipes from this site. Just go to the recipes section and look at the filling recipes. I like doing things that are not overly complicated. Ganache is fantastic and super easy to make. My favorite frostings are in the recipe section also, the Crusting Cream Cheese and Chocolate Syrup Buttercream.

I too would like to expand my range of cakes and icings and fillings. I've heard a lot about this cake mix doctor book and it sounds like it is worth investing in. Is that it's offical name and who is the author?

I recently made a banana cake with chocolate buttercream which was very good. I like to make scratch white or chocolate cakes with raspberry buttercream or mousse. I've tried a mocha flecked cake with Bailey's Irish Cream mousse (both Whimsical bakehouse recipes) that was sooooo good. A lot of my cake books have recipes and they almost always reccomend a filling / frosting for the cakes.
