What type of cakes do the chefs on FoodTV's "Challenge" usually use? I hear them referring to the cakes as "sponge" but I know they're not really traditional sponge cakes, right? They're so sturdy and don't crumble. Any ideas?

they use sponge cakes that have been frozen I think because they are lighter weight and when staching that many they can't be heavy.

They always handle those cakes like they are boxes. They just can't taste good and moist! Pretty, but yucky is what I tell myself!
