Well, I finally did a blind taste test of the three fondants readily available to me, MMF, Wilton, and SatinIce. I made 3 cakes and brought them to work with surveys to rate which everyone preferred.
Let me say that the only other time I've covered a cake with fondant was in Wilton class III, though I've used it as accents on bc cakes. I know there are people who specialize in fondant and probably could've improved texture and taste, but this was my attempt to create an even playing field.
All the cakes were a yellow cake mix and covered in regular buttercream. I didn't color or flavor any of the fondants, again to keep it even.
I just bought the diamond press and wanted to try it so that was first using SatinIce (the winner of the taste test). It didn't seem nearly so sweet as the others. I also put a bc border around the bottom, but since I wasn't focused on presentation I didn't bother covering the cake boards. BIG MISTAKE!
by the next day the cardboard was soaked in grease. Because of that, it's difficult to tell in the picture how much more off-white it is than the others.
The Wilton was very predictable and I found it easiest to work with. That being said, it scored significantly lower than the SatinIce and as I mentioned, several people found it very sweet! I even managed to make a bow! ![]()
Okay, this was only my 2nd attempt at MMF and I just read the post asking for MMF tips (I wish I'd read it last week
) I dumped in the entire 2 lbs of sugar not realizing that it might vary somewhat. It was so dry!! My hands were killing me after kneading it. I had a very hard time rolling it out because it wouldn't hold together. I sprinkled some water on it and managed to get it rolled out, but couldn't get it thin enough. It was last (and very late) so I just threw it on the cake anyway and covered it with freehand scrolls. Many of the comments said it was chewy and tough and it scored far lower than the other two. From a distance it looked the best, not close up though.
I know this wasn't a fair test for the MMF, I do want to try again. There are others who use it all the time and have great results. But this was the result of my personal taste test for those interested.

Sooooooooooooo Interesting and Valuable information. I struggled with the fondant taste also. I made a cake once with wilton and no one liked it. I tried MMF and again people peeled it back. In my quest to not give up (because i just love the look) I ordered satin ice for my daughters sweet 16 cake which i am making this weekend. I'm hoping that people will like it. I've heard good things about it. Thanks for your trial. It sure came in handy!
I have only used MMF and Wilton and everyone was relieved that there was something out there besides wilton because it tasted terrible. Eveyone seemed to really like the MMF but I only used them as decorations not to cover the entire cake.

Anyway, she compares all the fondants. I thought it was very interesting. Personally, I LOOOOOOOOOOOOOOOVE MMF. Marccrand, give it another try. I put half the powdered sugar in the bowl, add the melted marshmallows, then add some of the rest of the powdered sugar. It always turns out so nice.
Never dry.

I have only used mmf. No one liked it the first time, but when they found out it was marshmallows, the kids all wanted "that marshmallow stuff" and were fighting over the decorations. My results were: decorations, but not cake covering for mmf. Too chewy, as stated.
Question: Can mmf be added to gumpaste for 50/50, or only regular fondant?
