ok...i have a slight problem...hear me out...
i live in an itty-bitty town...like 200 people...and we have one little town store...this town store is on a MAJOR highway...so there is a lot of exposure for vacationers (to the wineries and Finger Lakes region), hikers, shoppers, etc....
The owner of this little bitty store is a family friend and offered to sell slices of my cakes in his store during the lunch rushes (he has about 150 customers from 10-4)...he doesnt want anything fancy..just 10" or 12" double layers with borders (no fondant or flowers or carvings or anything) any flavors or combinations that I choose...heres the problem...i normally charge $2.00 a serving for my cakes...which would put these cakes at $80 (according to Wilton cake serving sizes)...there is NO way that he would pay that for a 12" cake....so what should I charge...I know he's doing me a favor...and I'm grateful..but i just got laid off and right now this is my source of income...so should I just suck it up and hope I get orders? hm....sorry...lol..I'd appreciate ANY input..thanks ![]()
I'm sure he's not going to sell a 1 x 1 x 2 piece of cake to someone. He's looking for "a piece of cake". Wilton bases their count of slices on that 1 x 1 x 2 measurement. How much does he plan on charging his customers for a slice of cake? I think you have to base your price on how much he is going to charge customers and I would ask him how big of a slice he will be selling. Then you can figure out if you'll be making any money or not.
I am sure he is looking for party slices, not wedding servings, and I would use 8x11/2 or 8X2 inch rounds and stack and double torte for a pretty sliced presentation. When you are charging $2.00 a serving, that is retail. Obviously, since this store owner is looking to retail the cake, you're going to need to sell it to him at wholesale. You will need to decide if it is worth your while to sell him larger servings for a lower price.

Anyways, I think you should charge him what you need to to make this work for you. $80 might be a bit high for a simple cake but I wouldn't come down too much...this is a business...
