I bought a ballet shoe candy mold online for my nieces birthday this sunday and when I pulled the mold away from the plastic I noticed "inside" the shoe even though the candy was smooth it had lots and lots of small white dash-marks .. hard to explain .. does anyone know what I mean and if so what is that from? I tapped the mold down once or twice to remove air bubbles before it started to set up .. not sure what they are from and I dont have another bag to make another mold ... grr ...
They are bloom marks I believe. What you want to do is wash and dry the mold really well. Are you using cand melts or tempered chocolate? Either way, make sure that the mold is really clean. Also, make sure you set the chocolate up really well before you remove it from the mold. Stick it in the freezer for a couple minutes, then look at from underneath, and when it looks foggy, it'll be ready to come out well. Hope that helps.
I've also found that water spots sometimes appear on the molds if allowed to air-dry, and they can show up on the chocolate. I always "polish" the cavities of my chocolate molds before pouring them, and this always gives a nice, shiny finish.
well I did use wilton candy melts ... maybe my mold was not clean enough? I set it in the refridgerator instead of the freezer I wonder if that made a difference? Oh well, it is for my niece and I don't think she will notice!
