I would take all of them. I had a little backround in decorating also. I took a culinary course in cake design in high school through the college and I still picked up great tips from class 1. You can know almost all there is to know, and still learn from the beginning. Plus, it is SO much fun! My last course 3 class is tonight and I'm dreading the end of July when I am done with all 4!
