I got my first referral from the place I am renting the kitchen from. A dessert buffet, approx. 24 people, in 2 weeks. The dinner is casual (BBQ) and she wants nice desserts, self serve (I'm thinking mini) everyone can try 2-3. I need to come up with a list of thing for her to choose from and meet with her to finalize the details. I know this is not a huge initial order but they do a lot of events and I've got my foot in the door, epsecially since they want to do it in this location.

So I am here asking for your ideas for the menu, pricing, set up, decorations etc. My initial thoughts are brownie bites (2 flavors), mini cheesecakes, cupcakes (minis?) with a cute little decoration on top, a fruit tray, mini pecan pies, maybe a couple of types of tarts/specialty cakes?

Is a little tasting (and I mean little) good for the meeting? I can always give leftovers to the dr's office, ER or something, get a little extra promotion out of it. Whadda y'all think?

Although I can't help you with the pricing I think mini cheesecakes would be good ...maybe some cake balls or petite fours. The mini pecan tarts sound good too. How about some lemon bars. Do you have the cake mix doctor book? It has some wonderful recipes in it .

Good luck! thumbs_up.gif

OOO Cake balls are a great idea since not too many people know what they are. That would be a great promo that you can make these great things that others haven't tried yet ect. GL.
