Here is a pic of the mini sombreros and blanket I made from fondant.I also made a few red chili peppers and some morrocos and plan to make a few more.What else can I add to this slab cake??It is quite large at 18x22 so I need to fill up space.Ideas....

How about a "map" of Mexico (really more like an outline) drawn on the cake with buttercream stars pointing out major cities written in buttercream! Then you can place your sombrero, maracas, etc. in various places.

how about pom pom trim on the hats, bottle of tequila, or a colourful drink with an umbrella, palm tree, beach, donkey, but a cactus for sure.... red chili peppers or guitar. (mariachi band)

since your doing a full sheet cake, pipe a second border about 4-5" in from the edge and ice that area in mexican colours. that will shrink the surface that you have to decorate with your fondant things you have made and add more colour.
