I am thinking of using coconut milk and pinapple juice left over from my cake in my buttercream. Will I need to refrigerate? My cake will need to be out of the fridge for several hours... Any ideas?

How many hours is several? If it's like 3 or 4 I think it will be fine.

yes i would refrigerate it. coconut milk is highly perishable. maybe you dont have to right away. but if you have left overs i would park it in the fridge.

and yet another opinion . . . it will be fine left out. there isn't enough liquid to make a real difference, given the amount of sugar in the icing.

I did coconut buttercream by adding coconut flavoring. It came out really good and would require the same care as your usual buttercream.

I've done chocolate buttercream and added coconut flavoring and it was awesome. Super Good.
