Very Disappointed!

I was asked to do a bridal show for a hotel in our area. I was going to be the only cake rep and there was no fee for the bridal show. I was so excited and started designing the cakes I was going to serve and show. When I received the phone call, I was very up front with them and let them know that I wasn't licensed and wanted to make sure that there would be no problem with that. The bridal show is scheduled for August 27th. I just got a phone call from the rep for the hotel and she discussed it with their general manager and they weren't comfortable with me not being licensed. Kind of makes me feel like I should have kept my mouth shut but I didn't want anything to happen. I can just imagine setting everything up and then a health inspector walks in. What would you guys have done?

Also, a side question, the hotel is licensed to serve food so if I were to serve it there would I be covered under their license or does it have to be prepared in their kitchen?

I would say it would fall under thier insurance, and thats the biggest problem, If someone were to get sick or hurt by something you baked and served in thier establishment, the injured party would go after them, cause thats were the money is, and you most likely don't have millions in the bank so there would be no way for them to recupe the lost.

And that's the reason I was upfront with them. I don't fault them for deciding not to use me. I didn't want them to get in trouble or me either. I just get so frustrated with the rule and regulations for home bakers in Texas.

A lot of venues and places will not allow an unlicensed baker in their doors.

Wedding receptions are big on this and restaurants.


I understand the dissapointment, but be glad you did the right thing...who knows....could have saved you a lot of trouble in the long run if someone found out on their own that you're not licensed.

Solved my problem!!! I am baking the cakes in our church's kitchen (which is licensed) and decorating them at home. I knew I could come up with a solution. I'm very excited about this. I'm the only cake person that will be there!!!

Good for you! You have a certified kitchen, but you still may need to go to your city and get a license to do business. Hope you get lots of orders!

Just wanted to let you know that I just posted the pics from the cakes that I made. I was very pleased with the outcome. Thanks for everyone's encouragement and help while trying to make this decision. FYI - I've already gotten 3 cake orders from other people in the church because of them seeing these cakes.
