You can thin down a preserve to make a wash, for chocolate I'd use apricot, cherry or orange (marmalade). If it's a cake for adults you could use a liquer as a wash (an orange, coffee, cherry or chocolate based liquer would be lovely), or add some cocoa powder to simple syrup to make a basic chocolate wash. Hope that helps!
Oh yes! To name but a few chcolate liquers:
Creme de cacoa
Cadbury's Chocolate Cream liquer
Guilian (the Belgian chocolate praline seashells brand) liquer
Amade (a chocolate orange liquer made in Austria)
Alumni (US product)
Mozart chocolate liquer (another Austrian product)
Godiva (Godet from the same producer is a white chocolate version)
Vermeer
All Irish Cream type liquers contain a chocolate base, so Bailey's, McGuire's and St Brenedan's Irish Creams work well with anything chocolate
Hope that gives you some ideas!
bonjovibabe - should we be worried about your detailed knowlege of liquor?? Though if you look at my cabinet it is pretty full too -and it seems this baking thing keeps me adding more bottles! For the cakes not the cook! (though who knows maybe a few for the cook would help the cakes!
)
I have actually made a simple syrup using chocolate. If I recall correctly the recipe was in Icing on the Cake and was pretty much made the same way as simple syrup, you just added unsweetened chocolate (dry) with the sugar.
LOL coffeecake! I don't actually drink much at all, maybe a glass or two of wine maximum per month (if that!). My detailed knowledge comes from the fact they contain chocolate - now with that I have a big problem (as my hips and thighs will testify!) ![]()

bonjovibabe - I hear you there! After a stressfull day give me chocolate! And if counting calories (haha) I take dessert over booze anyday! (unless there is booze in the dessert - then I want both!!
