You all have probably done this, but I am nervous about doing a chocolate mousse with chocolate cake. I was going to do chocolate cake from hershey with fondant icing. Has anyone ever done this and freezed this cake? Can I do it with chocolate mousse as filling?
I think your chocolate cake and mousse will be fine if you want to freeze it, however I would not freeze the fondant. If you have to freeze the cake I would fill it and put a coat of BC on it then freeze. Then thaw cake out in the fridge still wrapped, once it is thawed I would put the fondant on and decorate.
