Need Immediate Help!!

I have a cake for Thursday...plan to start baking the cakes tonight. The lady only needs cake for 15-20 people. The 8 inch 2 layer round just looks too small even though wilton says for 24. I have 2-3inch 9 inch rounds...but I am not sure how much that will make...thinking too much. I do not want to do a sheet cake, nor does she want that. Any suggestions? I was thinking of doing the 3inch deep 9 inch w/ one mix per pan, but I am afraid it will be pretty shallow...has anyone else ever done this. It is now 7:30 pm EST, and I was really hoping to have in the oven by 8:30 pm at the latest...please send me advise!! icon_cry.gificon_cry.gif

PS. the cake design will have 4 sports pictures on the sides of the cake, and then pom-poms on top. I only have one of each of my square pans, but have 7 inch, 9 inch-3 inch deep, 8 inch and 10 inch all in rounds x 2.

I have 8" pans and 9" pans. I stopped using the 9" because the cakes were shallow for one mix. The 8" cakes are perfect for one box mix. I never think the serving suggestions sound right either. Maybe I just cut bigger slices than everyone else. Don't forget not everyone eats cake (diets, flavor, etc.).

You should be fine with the 9x3 pan and 1 cake mix per layer. It will look a little shallow but I only ever use 2 inch high pans and they turn out fine. I would love to see the final cake! GOOD LUCK!
