Saxophone Cake...

I have been asked to do a saxophone cake for someone at work. Going to carve out the saxophone and do it a bit 3D (see pic below) but I need to put it on a half sheet (11x15) so that I have more cake for the number of people they want it for.

Question: Would you cut a board to match the saxophone and frost it on that and then set on sheet cake or would you place and then frost?

I am thinking that the sax might be a double layer and the sheet a single or maybe the other way around?

I think it would be easier to frost it first, but I've never done anything like that so I just don't know! Good luck and here's a bump!
