I'm new to Cake Central and have seen Meringue Powder mentioned in various threads. Some have mentioned it adds "height" to their cakes. Can this be added to a boxed cake mix, does it alter the taste, texture or color of the cake? Does it really work and how much to add per box mix? I'm very curious! icon_smile.gif

Hmm, Ive never heard of this. I do notice that when I use the powder in my royal icing it adds a "flavor" to it I dont know exactly how to describe. But because the flavor IS so noticable (at least to me...) it seems like it would add taste to the cake.

Somebody else answer - Im curious too icon_smile.gif

I have only used meringue powder with a box mix to replace egg whites when I was short an egg and didn't have time to go to the store. I always use it in my buttercream and royal icing so I don't know about a difference in taste. I am pretty sure it has a slightly sweet taste, but I don't think it would alter the taste in a cake mix unless there is a lot of it in the mix. You probably would only use about a tablespoon in a mix I would think.

I use about 1 TBS Meringue Powder to my cake mixes. One of my Wilton Instructors told us about this and I've done it since then. I does add just a bit of heigt to it and it does not change the taste of it (it is a bit sweet, but mixed in with everything else, you can't tell it). I also use it in my buttercream icing to stablize it and help it to crust.
