How Do I Decorate With German Chocolate Icing?
Decorating By Lari Updated 11 Aug 2006 , 12:44am by Sweetcakes23
I am doing my first groom's cake, and the groom wants it to be a German Chocolate cake with the German chocolate icing (with coconut and pecans) Any ideas for decorating with this type of icing? Should I use buttercream for the borders and such or will the german chocolate hold up?
You won't be able to pipe anyting with the german chocolate icing. If you want borders I would use a chocolate buttercream.
That is such a good question! I have wondered about this a time or two and then will occassionly come across one when I am browsing through the million and one cakes I look at on an average basis. I'm sure that there are some creative ways to be able to decorate and also incorporate the german chocolate frosting, etc.
I can't wait to hear peoples ideas!!!!!

German chocolate cakes normally have the coconut and pecan frosting on the top and filling not the sides. You could easily use chocolate butter cream on the sides and any decorations which you would like to add. Also the butter cream side frosting would keep the cake fresher.
Maybe...
german chocolate icing inside the cake between layers, and chocolate buttercream on the outside so you can decorate it.
OR
ice the cake with german chocolate icing, and put giant stars or swirls on top with chocolate wedges sticking up from each one, so they form a circle.
There is one in the grooms cakes gallery that is all german chocolate and looks like there is a chocolate plaque or something on it. It looked very nice. I make the coconut pecan frosting, then decorate with thick fudge frosting (an old Betty Crocker recipe I believe) or chocolate BC frosting and whole pecans. That way, you still get the original effect, but can make it look more dressy. Yum! This is my hubby's favorite too, so I make it AT least twice a year for special days.
How about doing on of those chocolate transfers? You can get them at some of the online stores and they showcase an awesome and classy effect.
"mikaza" does some pretty awesome cakes like this. http://cakecentral.com/modules.php?name=coppermine&file=displayimage&meta=allby&uname=mikaza&cat=0&pos=18

I have iced the sides in the coconut pecan icing and chocolate buttercream on top. Or I have iced the sides in chocolate buttercream and done the coconut pecan icing on top. And the last cake I did I iced both sides and top with the coconut pecan icing.
You can use chocolate buttercream for borders as well as dots, swirls or scrolls on the sides. I think most people that ask for German Chocolate cakes are looking for the taste of it, so that's why I try to give them some of the coconut on the sides or top (or both). It's more of a dessert cake than a big decorated cake, to me.
Hey guys, These choc. transfers you are talking about....This may sound dumb, but how do you get those enlarged or to the size you want? Can you use any picture? I ordered some 4x6 cards with many pictures on them from Kopy Kakes but don't really know what to do with them now to get them larger.
