Is there even such a thing as a fruit flavored cake, or is that why we all torte them and add fruit fillings? I'm making "potted cupcakes" for a bridal shower in 2 months. The bride loves cupcakes but actually her fantasy dessert is fruit based, like a fruit tart, etc. Was wondering if there are any cake recipes that could act as a compromise since I don't think I could properly tort a cupcake (LOL!). Peach cake? Raspberry (there's another thread on that)? Anything? Or should I just stick some berries on vanilla cupcakes and call it a day?! Oh I do have Martha Stewart's banana cake recipe so that's one fruit down, two to go... icon_smile.gif

If you want a fruit filling in the cupcake it is very easy. You can do it 2 different ways. 1. Use a pastry bag fitted with a large round tip and gently push the tip into the center of the cupcake and squeeze the desired amount. or 2. Before you bake your cupcakes put a spoonfull of your filling on top of the batter and the cupcake will bake around it.

Also...I have the book Cupcakes From The Cake Mix Doctor and in it there is a recipe called "Plum Good cupcakes" and it is made with strained plum baby food. You could probably substitute any fruit baby food. If you are interested I can PM you with the recipe.
