Hi all!
I've got 3 cakes all due on the same day. One is a wedding cake and the other two are two tiered/stacked birthday cakes.
I'm wanting to use White Almond Sour Cream Cake for all three (figured it's easier)
Questions:
Does it freeze well? I hate to freeze cakes, but I'm going to have to at least freeze a couple of layers beforehand.
The wedding cake is to be done in WASC with Cream Cheese frosting and strawberry filling, that should taste good right?

Yes, it will freeze fine. Combo sounds good. Though have you used cream cheese frosting? I found it difficult to work with personally.

I use the Crusting Cream Cheese recipe found here, and it's my most requested icing. It works really good for using too with borders and such. Its not stiff enough for roses, but I can do a basketweave just fine with it.
