I have a carved cake to do the end of the month. It will be a Clifford the Dog cake. He will be laying down flat on his belly and the instruction I found call for using the Wilton Doll pan. The customer wants the box funfetti mix for the cake. Do you think this will hold up? The cake will not be stacked high so I don't have to worry about a lot of weight.

Opinions appreciated!!

I think it should be okay with the funfetti mix, but throw in about 2-3 extra Tbs. of flour- that should make the cake a bit more dense.

I have found that Pillsbury has a good texture for carving.

I believe funfetti is a Pillsbury brand.

If I add flour it won't make it too dry?

I can't answer the question about the flour. I usually just make it using the directions on the box.

I do a lot of 3D and carved stuff and I've never had a problem with being too dry.

I made the doll pan with Pillsbury and it fell apart. Its was too soft and moist. I later tried it with the cake mix extender recipe on this site and it was great! Moist enough, but more dense. Makes a great tasteing cake, and holds up well to sculpting.

The cakes also get more dense if you follow the box directions but substitute milk for the water, and then add an extra egg and a box of pudding of whatever flavor your cake is. You can also add a hint of flavor to white or vanilla cake by adding a different flavor pudding (something like butterscotch or caramel for example).

Pound cake works wells for sculpting also.
