Icing Cakes While Frozen

I've heard that a lot of people ice their cake while frozen, but then I read to always let them thaw before icing.

Any opinions about this?

If I freeze a cake, usually just overnight, I let it thaw out before I ice it. I do think there are some folks who ice frozen cakes, but I don't know how that works out.

I do my crumb coat while the cake is still frozen. Also, I ALWAYS freeze any sculpted/cut/trimmed cakes first -it helps to 'secure' any crumbs and makes that crumb coat go on so much smoother. You also don't get any 'drag' from a softer cake.

Once the crumb coat is on, its too hard to smooth out as the frosting has chilled too much. Let it sit for a bit and then you can work with it.

does anyone apply fondant to cakes that are frozen or refrigerated? I'm worried that the buttercream will "sweat" under the fondant...

Don't worry about the buttercream - worry about the fondant! All the fondant accents I use on top of BC have come out of the freezer sticky, sweaty-looking, and take forever to dry back out. I've actually had some of the colored fondant bleed into my buttercream (because it sweats, too).
What a mess! Check out my frog cake - all the dots started to bleed into the green... yucky!

I will freeze and ice sculpted cake, as they hold together better. As for a regular cake I have iced them partially frozen with BC and at worst they might sweat a little, they will dry out. I usually wait before I add any borders or flowers. I never freeze fondant. It gets too sticky.

Soo...if you ice the cake frozen its going to sweat, do you decorate too and then let it all dry out, or do you wait for it to dry and then decorate?

Lambshack....cute cakes and awesome cookies!!! I wish I had time to decorate cookies all nice.

I can see how buttercream would "sweat" after freezing. I don't intend to freeze the cake once fondant has been applied. I just want to make sure that it's safe to apply fondant to a cake that has buttercream on it that has just come out of the fridge or freezer or if I should wait until it comes to room temp.
