Why Does My Cake Dry Up!!??

Hello to all of you I'm new to this forum and I will be bothering for the next couple of years...lol! Okay my question is, does anyone know of a good recipe for a really moist cake? I have my own recipe for a yellow cake but when I bake the cake and leave it out it's fine, but since I have to put it in the fridge so the frosting won't get ugly it gets really hard. Is it possible to make a VERY moist cake? PLEASE HELP!!

What fristing do you use? Some can be left out.

Welcome to CC and congratulations on your 1st post. I'm sure you're hooked by now.

Do you wrap your cakes in plastic wrap as soon as you remove it from the pan (while it's still hot)? That's a fantastic way to seal in moisture. Using that method gets me lots and lots of compliments on how moist my cakes are.

Also, like butterflyjuju said, some frostings can be left out.

Welcome to Cake Central. Are you putting the cake in the fridge uncovered? What type of frosting are you using? My favorite cake is very moist , White Almond Sour Cream:

If you ice with regular buttercream icing, made with butter, shortening, water and powdered sugar, you can leave the cake out of the fridge as long as it is covered or in a box.

I never thought of wrapping my cake. Does that really keep the cake moist? Any other ideas?

I have this same problem, which is why I only use box cakes. I guess I should get up the courage to try again. I like the wrapping it in saran wrap while hot trick. Maybe that will work.

Wrapping in Saran Wrap while hot absolutely works. As the cake cools it releases moisture into the air. So when you wrap the cakes in Saran Wrap it holds in the moisture. I don't take it off until the cake is completely cooled and I'm ready to crumb coat it. I'm always getting compliments on how moist my cakes are. Funny thing is, my aunt is still trying to figure out my "secret". She thinks I add sour cream or something else to my mixes.
