Fbct - How Long Will It Last In The Freezer?

Hi everyone,

My niece has asked for a Little Mermaid cake for her bday this weekend. I thought I would try doing a FBCT - I've never done one before. I'm making the cake tonight and will freeze it afterwards. I was going to attempt the FBCT tonight or tomorrow... how long would it last in the freezer? I wasn't going to ice the rest of the cake until Friday night - the party is Saturday. Would this be ok?

Also, I've only ever made the Wilton Buttercream recipe... would this be ok for the FBCT too?

I had one in the freeze for about 3 weeks. I just wrapped it well in saran after it was frozen (still on the cake board) so it didnt taste freezery.

I think MOST people suggest using a recipe with part butter. I am not sure the reasoning, maybe it comes off the paper better?? I am not sure why exactly. Just subsitute 1/2 of the crisco for butter. Or do a search for squirrellycakes FBCT buttercream recipe. It is a great consistency for doing FBCT's. It does not crust really well though, FYI.

I also prefer to do mine on parchment (wilton silicone treated type). I read a lot of posts where people say their transfers get stuck to wax paper. I have always had good luck with parchment. JMO.

I accidentally left one in the freezer for a couple of months (and I didn't follow the recommendation for using 1/2 butter) and it sure did NOT last! I was crumbly, the color bled, and it fell apart when trying to get the wax paper off the cake board. I can't answer you question on the maximum time, but 2 months is too long!

I did one with the Wilton Buttercream last week and it worked for me. I can't tell you how long it will be ok in the freezer though. I would think it would be fine if you are using it this weekend. Just my opinion. Good luck. Post pictures.

The Wilton recipe is 1/2 butter, 1/2 shortening... so it sounds like I'll be ok.

I read that FBCT would be ok for about 24 hours, so just wanted to make sure it would be ok for approx 48 hrs. I don't want to leave it to the last minute, especially since it will be my first one. It will give me time to come up with a "plan B" just in case. icon_smile.gif

I have my first coming up too! I made one to practice and forgot about it icon_sad.gif Good luck to you!! Post pictures

I did one with the Wilton BC recipe 48 hours before I needed it and it worked perfect! You'll do great!

Well, I just handed the cake off. I had a lot of fun making the FBCT's. I learned pretty quickly that a thinner tip is best to outline with. I started with a thicker one for her hair and changed it right away, b/c I knew I'd never be able to do the smaller details.

They broke in a few places as I was removing the parchement paper, but I was able to fix them with out it being too noticeable. I even bought a foam roller to try out Melvira's method, but thankfully was able to get it relatively smooth without it. I'll save it for another project!

Thanks again everyone for your help! I'll definitely be trying this again... maybe another design for her "family" birthday party is in two weeks. Pictures were just posted.

Great job on the FBCT!!!! It looks so cool with the blue background!!! Maybe next time try using wax paper instead of parchment, it may help with the breaking apart. It doesn't stick as much! Great job!!!
