...... I have two cakes due for next week - one for Thrs. and one for Fri., both will involve a good bit of decorating. (I am not home during the weekends so that may cause a problem). One cake is a 2-layer 11x15 and the other one is a 2-layer 12x12 with a sportsball cake on top. What sort of timetable would you use to get these done?

Do you have room in your freezer? Bake your layers now and freeze them. Then make/color your icings and store in the fridge. A couple of nights prior to decorating fill all your bags, get your cake boards and boxes ready. The night before just take your cakes out of the freezer flip them onto the board, pick up youor bags and start decorating. Good luck.
