My friend's 9 year old son does not like cake, loves brownies. She wants a big (I'm thinking 9x13) moist, chewy brownie rather than a birthday cake. I don't have a lot of experience with brownies. Does anyone have a larger brownie recipe, maybe using a doctored mix? I will be putting a fbct on top. Thanks!

My brownie recipe is baked in a 9x13" pan and is considered very good by many.

1/2 cup chocolate chips, melted
1 cup butter, very soft
2 cups sugar
1/2 tsp. salt
4 eggs
2 tsp. vanilla
1 1/2 cups all-purpose flour
1/2 cup cocoa, sifted
1/2 cup chopped, toasted pecans (optional)

By hand, mix melted chocolate, butter, sugar, and salt until well combined. Add eggs, one at a time; mixing well after each. Add vanilla with the eggs. Stir in the flour and cocoa; mix until just combined. Stir in pecans if desired (or walnuts). Pour batter into prepared pan and bake at 350F for 30 minutes. Allow to cool completely before frosting.

This batter should be mixed by hand so that it does not turn out like cake. Using the bake-even strips helps to keep the sides from being over cooked and to also keep the brownies flat.

Your oven needs to be accurate. Time and temperature for this recipe makes all the difference.

I have had alot of success with the Ghiradelli (sp?) mix and they give you directions for a moister version right on the box. They are delicious and easy if you would be ok making a box mix.

I second the vote for Ghiradelli mix. They taste better than most home made brownies Ive had. In fact, Im doing a cake with it being the bottom layer next weekend!!

smart kid -- I'll take brownies over cake any day...

esp. if choco chips and walnuts or pecans (both!) mixed in.

and for total decadence -- melt bag of choco chips or peanut butterchips and spread on top


and can torte and fill w/ ice cream (one decadent ice cream sandwich!)

Do you bake from scratch, or from a mix?

If you make your cakes from a mix, cake-mix brownies are wonderfully chewey and good. My brother had to make some for one of his Cub Scout achievements, and they were very good. I don't have the book handy because I'm at work, but if you want the recipe, go ahead and PM me and I'll send it to you this evening.

must go make brownies now. Bam! There went the diet...

Wonderful thread! LOLOL Saving the recipe for later!

But it's not strange, actually... when some friends of mine got married, the groom told the cake maker that he wanted me to do the groom's cake... and that it needed to be one big brownie. So I ended up making it in the ssame pans as I had the bridal shower cake, and decorated it to look just like that one, only with chocolate buttercream instead. He loved what he got of it... there was so much wait time between the ceremony and the couple getting into the reception hall, folks demolished the brownies before he could see anything but the big one. I had to rescue it.

Likely, this little guy will grow up to have a brownie for a groom's cake, as well. icon_smile.gif

The party is this Saturday, I decided to make the Sunday Fudge Cake from the Chocolate CMD book, it starts with a brownie mix and is a more cake like brownie. I don't have much experience with brownies so hopefully it will turn out great.
