Edges Of Cake A Little Too Done

I was wondering when you bake your cake and the edges may come out a little harder, do you cut them off and then coat with icing.

The reason I was asking is because I have done it like this before and end up getting crumbs from the edge of the cake in the icing. So I had a mess to clean up using the toothpick to get the crumbs out!

I didnt know of another way to do it since the edges were a little darker and harder!

Please help!

You can trim the edges, then do a crumb coat before you ice your cake.

I use the baking strips and bake at 325 instead of 350. That should help eliminate the hard corners/edges.

Thanks. I do have baking strips, but forgot to used them on my sheet cake. This is only my third sheet cake. So I will forget this time.

A crumb coat is a thin layer of icing you put on your cake, to "hold" the crumbs - it will be crumbly, but that's OK. Then once it drys, go ahead and ice your cake!

I also use the oven bake strips ( I love those things)! But before I had them I would get hard edges, so i trimmed them off and did a crumb coat too.

I always use my kitchen shears to "cut away" the hard edges I sometimes get. I find it easier then with a knife. icon_smile.gif
