investment? This looks like a good book, but I haven't been to Pastry school and would like to know if it is good for someone who hasn't taken the classes. If there is another book that is better, would you tell me what it is?

I LOVE this book! Well worth the money in my opinion.

I think it's a bit much for a home baker. There is a lot of special equipment and ingredients used. What type of baking are you looking to do? I think Baking With Julia is an excellent book with a wide variety of recipes.

I second that. It's a wonderful book and worth every penny. It was required text for me when I was in school, but I've continued to use it years later.

I used it for one of my classes. I still use it now. I love the recipes in it, it is well worth the money. Check amazon.com sometimes it is less expensive there and you can look into purchasing a used copy.

I think it is an excellent reference for people who have gone to school or work professionally. But I believe that the CIA text on professionl baking would have much more up to date info.
"Baking at Home with The Culinary Institute of America"
It is more geared toward a home baker and probably less classical and fundamentalist. It costs almost half and has all the info they teach.
You can look at it and in it on Amazon.

I didn't go to pastry school but I love this book! It has tons of information and worth every penny. It explains how things work in detail and the recipes are good.

Thank you! Someday I hope to go to pastry school, but in the meantime I would like to learn how to make some of the beautiful pastries I have seen. I am not worried about specialized equipment and ingredients because I will just pick them up a little at a time.

Thanks, keepontryin, for the suggestion of "Baking with Julia". I looked at this book and already have a few books that cover this material. But again, thanks.

Thank you, jesaltuve, for the suggestion. I looked at that book, but I think for now, the other one has more of the recipes I am looking to learn how to make. I do think the "CIA" book is one I would also like to get at some point. (I admit, I'm a bibliophile, in addition to a chocoholic and a cake central addict!)
