Doing a charitable cake this week and although I am not sure now what I was thinking at the time, I decided to do a spice cake. Have no idea what to do for filling, however, so tell me what your tastebuds think!

Here are some great fillings for spice cake:

Bavarian cream, apple, or cream cheese.

As cakesbyjess mentioned, cream cheese is great with spice cake. I also have used maple flavoring in the icing with DELICIOUS results... whatever you end up doing, I'm sure it'll be great!

If it were me, I'd pick something neutral....like vanilla buttercream. But I love the applesauce idea.

I have always liked peanut butter icing on spice cake, so a peanut butter/buttercream mix for the filling sounds good to me icon_smile.gif

Forgot to mention - no refrigeration available, the cake is due Thursday and my kitchen is being ripped out Monday...cream cheese options probably out, but maple, caramel, and even honey could work...All are welcome, so keep 'em coming!

I used a cream cheese/whipped cream frosting recipe I found on this site, and used apple pie filling. It was fabulous

Sorry, I just have to comment, I love it, LOL. If the dog had a black nose and a white chest, it would be mine for sure when I'm in the kitchen with the mixer running. That nose starts a sniffin' and it won't stop, LOL. I actually saved your avatar in my pics b/c I thought it was so cute.

back on topic:

a pumpkin mousse? (after all pumpkin pie is just a ton of spices w/ pumpkin)

instead of applesauce.. small chunks of apple w/ cinnamon in a pie filling type goo

or mix the apple chunks & cinnamon into some BC or cream cheese

or do a take on the pecan/coconut frosting done on german chocolate cakes ... only drop the coconut and put in cinnamon instead -- in fact could candy coat the pecans first and them mix into butter cream or cream cheese

MMMMMMmmmm spice cake...I like the apple filling ideas...maybe a nice walnut or praline filling. Spice cakes are usually "strong" flavored..I'd pick a filling that would compliment it and not fight with it.

I'm betting that toasted macadamias would be great too...just give it a bit of a crunch and a different flavor than the walnut.

I love spice cake and find it goes well with a maple buttercream. I just add some maple extract. It also make a nice color that seems to compliment the spice idea. I sometimes also add crushed walnut pieces to the buttercream for the filling and place a few whole walnuts around the top of the cake.

Darlene, do you have a special recipe you use for maple buttercream? It sounds delicious and sounds like something my MIL would like for her birthday on Saturday. Would you mind sharing your recipe?

I made a spice cake this Christmas that was originally from Emeril on the Food Network website. It had an apple puree filling and it was delicious! The recipe also had a toasted nut cream cheese icing. The cake was a HUGE hit. My Dad loved the filling and there's no pickier critic on Earth than my Dad! thumbs_up.gif The toasted nuts in the icing were sooo good too!

I saw this on a website when searching for something else--no recipe, it's a wedding hall but it sounded good: buttermilk spice cake with vanilla custard filling and apple-brandy-scented buttercream.

I added some buttercream recipes in a rum buttercream request thread in the recipe forum, if anyone wants to check them out. Some are from here but there is a good sounding one from Godiva. They all sound good and fall will be here in several weeks, spice cake will be picking up some by then. thumbs_up.gif
