When making a fondant figure, do you leave it out so that it dries or do you keep it covered? I'm making a figure that I'm going to use on a cake next week so I wondering how I should store it. Thanks for any advice.

Leave it out to dry after finishing your details. Then store in airtight container away from humidity if you are not going to use it right away.

make it as far ahead as you want. in fact, there are food safe sprays that will seal them and you can keep them for ever and re-use them.
