Cheesecake Question

I have recently been asked by a few customers to make cheesecakes for them. Not a problem, love cheesecake and have great recipes.

The problem ... does anyone have a tip/trick to get the graham cracker crusts off of the springform pan bottoms??? Mine always stick and I lose some of it. Not a problem for home or family, but not if someone is paying for it.

I have switched to glass-bottom pans thinking that they were smooth and the crust wouldn't stick, but I ran into it again last night.

Any ideas would be great!

How about lining the pan with parchment paper, would that possibly work??

When I wanted to get the cheesecake off of the bottom, I used a cake circle inside the pan. It worked really well and did not effect the baking.

Yep- parchment circle is the way to go thumbs_up.gif . Also if you pre-bake the crust for about 10 minutes it helps.

In the bakeries I worked in, I made a lot of cheesecake and didn't have a single springform pan. I used parchment on the bottom of the cake pans and never had a problem getting them out!

Thanks for the ideas! I don't know why I didn't think of parchment paper - especially with the glass bottom pan because they are not textured.

Now I'll have to go and bake another one just to see if it works! Oh well - more cheesecake to eat!! icon_lol.gif
