I have had the worse time today with melting buttercream. My roses were melting so fast! I think between my warm hands and the awful humidity here I was fighting a losing battle. I hope I have a better day tomorrow because I have 2 more cakes to get done! I think I'm calling it a night and start fresh in the morning.

How about using all crisco BC for you'r roses or even doing them in Royal icing.

Since the heat and the humidity have been so bad, I chill my shortning slightly then when I get it mixed I put the bowl in some ice to keep it cool.Since I am a hot-handed person I have also used a bowl of ice to lay my bags in. It helps. Good Luck.

I would use the all crisco buttercream and either add some additional meringue powder or some Stay Ice to it to help stabilize it more. I had a big cake last weekend that was in a non A/C room, and that is what I did. It held up perfectly.
