Basketweave Cake W/strawberries Need Help Fast Long Anyone?

Hi ladies I just started decorating cakes just finished Course 2 and loved learning the basketweave I thought I would try soon after my class to keep refreshed but I am having problems already. I never had problems with cing coming out from the sides of the cake and I have used preserves before but this time with my newly tried recipe of Chocolate BC (TOO SOFT) I decided to use that as icing as well I struggled to get a smooth cake which I know is not important in this cake I figured after the cake stayed in the refrigerator all night it might solve the problem well wrong hal way through my basketweave the icing in between layers started getting soft and it seems as though the cake my collapse well I finished the basketweave and you can't see that of course I added rope I the bottom and stuck it in the refrigerator and came for your help. The question is when I get ready to put the starwberries covered in chocolate won't it make my cake fall into a mush of everything!!!???? even if I do it while the cake is cold and so are the berries won't it collapse once it's been sitting out for a while? I plan to drop it of at DH's work which for the size 8" I can guarantee you it probably won't last long but should I take my chances of embarrasing myself anf DH or should I leave with a smooth top and add another rope edge at the top ???? I am sorry it's so long all help welcome and grateful ![]()
This did not happen with my final cake from course 2 but I also used a different recipe of choc BC because it was too dark for me so I thought I tried a different one Wilton's and my basketweave is better when two kids are not around!!!!!!!!!
Did you make your dam inbetween your layers? You need a stiff or at least a medium consistency for that. Remember you first only need a thing layer of icing on your cake and then let it crust before you start your basketweave. Maybe you should try and put just a few flowers on top, and then put your dipped strawberries around the bottom. If your icing is too soft, more then likely you will have some oozing and sliding going on. Good Luck.
Well I had thought about that luckly I have leftover royal icing flowers from my course 2 cake. I did not know you were supposed put a dam of stiff icing I thought any icing will do that never happened befoe with my other cakes from class I used the thin icing to make the dam and this never happened well I guess I better keep practicing my cakes so before thining the icing save a little to make the dam. So if I use the flowers you think might cake won't collapse??Should I take my chances eve with the flowers?? Will it collapse when they cut it???
Go ahead with the flowers; they won't add any weight. As far as it collapsing when they cut it, that most likely won't happen either (unless they cut it like my husband carves a turkey).
Well I will make sure I tell my usband to keep it in the fridge til they have time to eat it and cut it right away into pieces for everyone you made me feel better I was freaking out!!!!
