I see pictures of cupcake cakes and you make it look so simple. How do you make these cakes? Do you have to tort the cupcakes so they are flat (mine back with high raised centers) and how do you keep the cupcakes all together? How do you ice the cake when there are spaces between the cupcakes??? So many questions

while still in pan -- lay cutting board on top and weight it down to smoosh flat!
dab of icing under each cupcake is the glue
and by placing together offset (bowling pin) style -- very small gaps -- but then, who really complains about extra icing? ![]()

To make level cupcakes takes a few practice runs to figure out just how much batter to put into each one. Try to fill just enough to have the cake rise just above the level of the paper. I have a measuring cup that I use to get consistently sized cupcakes (just less than 50 mL). Some go as far as weighing each cupcake before baking . . .
