I was planning on doing a cake a day ahead. It will be done in BC with MMF accents. The filling does not have to be refrigerated. I probably won't have any room in my fridge and have company coming the day before the party.....can I leave the cake out for 24 hrs? We do have A/C so it shouldn't be too hot in the house. Will the cake still be fresh?

Thanks

A cake like that should be good for 2-3 days on the counter. Just keep it in a box.

It was explained to me years ago that once you ice a cake, the icing acts as a seal to help keep the cake fresh. They explained it like a bread wrapper.....when the bread comes out of the oven, Wonder puts it in a plastic bread wrapper and it sits on the store shelf and on your counter for days and it's fine. The icing is lilke the plastic bread wrapper. I've never had a problem (and my stress was greatly relieved when I learned this!) So just 24 hours will be fine.
