Ok, so what IS marzipan? Does anybody use it? what would you use it for?
marzipan is an almond paste that you can use for modeling. It is very big in european countries more so than in the states. It is often used for making fruits and such. I have never eaten any, but I am thinking that it tastes better than fondant or gumpaste. I don't think that it gets as hard as gumpasate of fondant either. Someone can correct me if I am wrong.

I make my own marzipan, cut it in nice shapes and then dip it in good quality melted chocolate when I make my own chocolate / candy boxes as gifts. It's always a favourite and taste absolutely beautiful. I'm not big on almond essence so I leave that out or only put a little drop in. I love the stuff!! I also use it in some cakes to make a marzipan cake. Yummy!!

where we use marzipan for covering cakes. It's a special ratio 1:3 for this and it is also called in "decorator land" american marzipan (that's funny not, since you girls don't have it
).
I cover almost all my cakes with it, it tastes great (wheeps better than fondant which I don't eat by the way
) and I think working with it is a lot easier than with fondant (it doesn't stretch or crack so easy). I also make decorations with it, little figures or pictures the sort you make out of BC or Chocolate.

Where do you get your marzipan from? All the marzipan I've bought in The Netherlands is horrible and nowhere near as high a quality as the stuff I buy back home in the UK? I find it to be far more grainy and gritty, and I would never put the Dutch stuff on a cake (and it costs far too much to make it myself, which I am capable of doing!), so if you know of a good source, I'd be interested in trying it!
Hi, the marzipan you can normally buy in Holland is 1:2 ratio or even 1:1, yes that is not meant for covering cakes. The one I buy is especially for covering cakes (and always 1:3 ratio). I buy it at the webshops here but I know that the wholesaler is Zeelandia (www.zeelandia.nl). You can buy it from there only when you are a "business" and the normal amount is a box of 14 kg or 25 kg.
Since I am not a business I buy a box of 14 kg at the webshop which is a lot cheaper than the 1 kg price. (1 kg price is almost 8 euro, while with buying 14 kg a box costs 75 euro).
The webshop I buy it from is (you are in Holland right now?) www.deleukstetaartenshop.nl (you can just send them an email in english referring to a whole box of marzipan)

I made the website myself, the design and the html-coding of it (well the more complicated stuff did my husband
) Was really a great thing to do!!
The video is not really a commercial, was just for the fun, I wanted to try it once, making a video, and well since cake is my "passion" I choose to do something with my cakes (instead of my wedding pics
) And when just thinking about making it, the music just popped up in my head, really great! So it´s my first video, and yeah I was pretty proud of it

Thanks for the info! I don't use marzipan much except under fondant/royal on rich fruit cakes, as my clients are almost 100% expats and we don't like cakes covered with marzipan - it's a very Dutch thing, and probably why they come to me in the first place - to get cakes they know they will like (just like the ones back home!). Even at the wholesale prices I can still get it in the UK much cheaper, but I'll keep it in mind - thanks again!
