I have a bride coming in for a tasting on fri, and she is allergic to soy, nuts and strawberries. Does anyone know of a buttercream-like recipe that doesn't call for any shortening. I use 1/2 butter 1/2 shortening in my buttercream to make it more stable.Her wedding is next June and we live in a hot and humid area, so I def don't want to make it all butter. Or a soy free shortening would be great too. Thanks

I would ask the bride what does she use in replace of crisco. There may be a specific brand that she can have with no problems

As for the price, remember you will be needing special items to make a cake to meet her needs so make sure you cover your cost and time to make something that you wouldn't normally.

I wanted to post what I ended up using...Spectrum Organic Shortening is made with Palm oil and no soy. It is very runny however, so if you are using it in a buttercream use half shortening and half COLD butter. And I found a product that is an egg substitute too. Ener-G egg sub, and it works great in my scratch recipes.
