I would say yes, especially if it's buttercream. I've done cakes 2 days ahead before when I have had lots and lots of cake orders for the same day. I've never gotten a complaint ... all I ever hear is how fresh my cakes taste! ![]()
Some very prestigious bakeries sometimes make those
gigantic wedding cakes as far as 15 days ahead of time, as long as it is in the fridge. Esp, cakes that are like up to the ceiling and have like a few thousand gumpaste flowers on it. ![]()

I worried and worried about doing my Granddaughter's wedding cake..... I don't have refriderator space, and someone told me if I used butter cream it HAD to be refridgerated....... Then I started to think ....HEY ! I've been making cakes for 50 years for home use, and I never had one eaten in one day...... the cake sits on the counter with a cover over it until the thing is gone.... NO ONE has ever gotten sick, so I'm doing the cakes as planned....... out of the freezer on Wed., decorate on Thursday& Friday, and deliver on Saturday ! It should be FINE !
