I am preparing a cake for this Sunday - 2 tiers that will be stacked. I have already baked and frozen both tiers. I want to make sure to do everything in a calm and timely manner and still have a fresh cake on Sunday. When should I begin to take my cakes out to defrost, put on the crumb coat and fondant and then do decorations. . .

I think Friday would be a good day to crumb coat and cover the cake and then have Saterday to decorate.

If you are going to crumb coat on Friday, I would move the cakes to the refrigerator on Thursday so they can slowly defrost. With all this heat lately I would be afraid to leave them wrapped on the counter to defrost for fear they would get too warm to quickly causing them to get gooey and stick to the plastic wrap.

I actually made some MMF on Monday night that I will be using on Friday. I did not put it in an air tight container but i did triple wrap it in plastic. Is that okay?
