help please,I swore I had lemon cake mix........NOT! so it's 11:30 pm my stores are closed.heres what I have,white cake mix,vanilla cake mix,lemon juice in the fridge and i have lemon extract...can I get a lemon cake that tastes good out of any of those combos???please help TIA
I've never done this before, but if it were me...
I would use white cake mix, sub 1/2 of the liquid called for with lemon juice and add 2 tsp of lemon extract.
My only concern would be the possible reaction of the acid in the lemon juice. Maybe someone else can help with that?
I'm baking one now! Try this:
One box white mix
For the liquid, use 1/2-3/4 cup lemon juice, then add water or milk for the balance of the liquid.
Add 1/2 t. lemon extract
Do you have lemon pudding mix? If so, add that too. If not, you may need to add more extract
Taste the batter to be sure it tastes like lemon. If it doesn't, you may have to add more extract.
I looked through my cake mix doctor book, but the only lemon cake I found starts with a yellow cake mix and lemon gelatin. I really hope someone else comes through for you.
if you have any white grape juice sub that for your liquid( 1/3 cup lemon juice and the rest white grape) thats what I use in my lemon cake and it lends it a nice flavor w/out to much lemon juice
