I asked this question on a post before, but thought it would make a great poll.

Normally the cake is one layer split in half for filling. Now I do have a pan that will double the height - it takes about 4 boxed cake mixes to get that height ( and that would be consider a double layer cake)

one layer for sheets, i split them and fill them when requested. For wedding sheets they are two layers just like the wedding cake.

I always make one and torte and fill but if I wanted a high cake for a small group I'll cut it in half then tore the halves and make a small high cake this way it looks more dramatic

I like 2 because they look so much more - generous?? dramatic?? - I just like the way they look! BUT it's a whole heck of a lot of cake and SO heavy!!!!! PAT

Whatever the customer asks for... I do "doubles" on the 9x13 sheet, they look really nice decorated and definately give the customer a custom cake icon_smile.gif I only do fillings for the larger cakes, so its more money for the customer, but they don't seem to mind the cost.

I always do 2 layers with a filling in the middle. For weddings I torte each layer and end up with four layers of cake and 3 layers of filling.

I have always done just one layer in the past but I can't ever get the 9x13 size more than 1"-1 1/2" inches tall. So I started torting them which really didn't give it a lot more height. Just recently I started doing 2 layer because I really like the height.

I only do one layer on 12x18.

I like to do 2 layers with a filling in the middle. I like how tall they stand and I just think they look more professional.

I have always done only one layer for sheet cakes.....

But someone told me that my local Publix actually made good cake, so I had to scope out the competition. I got a cake from them, it was sheetcake, and it was two-layer. I was impressed. I think I'm going to do that from now on, it did make a difference, and I think I can make it doable.
