Hello all, what type of vanilla do you all use for your baking? tahitian, madagascar, etc? I usually ask my parents to bring some back from Mexico, but I would love to try something new. Thank you!

Uh ..... I just use the clear stuff in the big brown bottle from my local cake supply store. There's no brand on it .... just her label telling us what it is.

I use Butavan which is a butter/vanilla emulsion. Makes everything yummy!

I use Butavan for most recipes, smells like popcorn.... really enhances the flavor (I didnt realize how much until I used extract one day, I could definitely tell a difference). icon_smile.gif

I use Mexican clear and dark vanilla, depending on what I am making.

I like to use madagasgar vanilla or creme bouquet. Sometimes I even use a little of both.

I make my own vanilla-- a bottle of vodka with two vanilla beans steeped in it for 3 months, then I get rid of those beans and put two new ones in, and voila... it smells WAY better than the store-bought stuff.

Darnit, I just transferred it to a Penzeys bottle so it would fit in the cabinet! It is just your normal Smirnoff or whatever you prefer--not the big honkin' one that you can buy. I hope that makes sense! icon_biggrin.gif

you start with a 1/5 of vodka it works pretty well. I made some and gave away small bottles to my grandma and my best friend. turned out to be a really good gift.

I buy the penzeys vanilla beans because they are something like 6 dollars for three of them and they are long and great quality. The ones at our local grocer are tiny, shriveled, dry and WAYYYYY too expensive.
