Freezing Fillings

Can you freeze homemade fillings like Bavarian Creame, ganache, or strawberry fillings? They are all cooked.

Ganache, yes.
Fruit fillings, yes.
Mousse, yes.
Custards, creams and bavarians, not so much. I've found that they get very watery and some even break after they thaw. Not really worth saving.

Can you freeze a cake with a curd filling. It's kind of like a custard but no milk. Just fruit, eggs,butter.

Any comments on a cake that is filled with custard or bavarian cream? Will they break down?

Hi I did freeze a cake with custard in it (made a dam of BC around it), it came out fine. Only freezing the custard, well I have never done that, only cake AND custard icon_smile.gif I have to say that it took a long time of thawing completely.

The lemon curd home-made I don't know I think in a cake it will be fine, freezing only the lemon curd I don't know, maybe just try a bit and see how it turns out the next day after freezing it. But isn't it possible just to keep the lemon curd in the fridge, or do you need to store it more than a week?

Thank you for info. I was just having some fun making some 4" cakes and I thought that maybe I could freeze on for another day.

I should have thought of freezing a small portion to test out. Great idea!!!!!

are you using 4" round cake pans?
