I always mix mine by hand, but it can be very sticky!! Use lots of crisco to grease your hands up first. It also takes a while and when I am done, my hands are somewhat tired.
I don't use a mixer for mmf. I put the marshmallows in the mocrowave 20 seconds at a time and I mix it with a wooden spoon.
But make sure you coat your spoon with plenty of crisco. It helps to keep the marshmallows from sticking too much to the spoon.
when all the marshmallows are melted, I add the confectionars sugar a little at a time until I dump the entire thing onto my countertop or silicone mat then knead by hand. It works perfect everytime.

Hey - I also have the KA ultra, and I use it for MMF. Sort of. I know, that makes no sense! Here's how I make MMF - after melting the marshamallows, I'll have half the sugar in a bowl (I think the recipe uses it all at once - but I find that it's too hard to handle that way. Besides, I also read that it can cause sugar pills if too much is added at once). I'll add in the MMF and mix in as much as I can with a spoon. By the way - make sure EVERYTHING is Crisco'd - your KA mixer bowl, the paddle attachment, as well as the bowl with the sugar you'll add the marshmallow mixture too, and the bowl you melt the marshmallows in. And the spoon you'll mix it with, as well as your hands when that time comes. Anyway, so I'll mix in as much sugar as I can with the spoon, and then I add it to the KA for a little bit - may 10 or 20 seconds. This helps get it to the point that I can start kneading it, and then I do the rest by hand. It really doesn't take that long, although it sounds labor intensive! There's probably easier ways to do it, but this is what I found works best for me. When making the small receipe, I do that entirely by hand - it's not worth it to get all those extra bowls dirty. But when making the big recipe, I found the KA didn't work too well from finish to end. Like you, I was afraid of burning out the motor. Also, it would inevitably leave a pile of sugar at the bottom of the bowl, and this would be full of those annoying sugar pills - like little hard balls of sugar that don't dissolve. I also tried the dough hook, like the receipe stated, but I found the paddle got the job done quicker.
