I was wondering if any of you use the crusting cream cheese buttercream under fondant for the crumb coat. Does it work the same as the plain buttercream?

I have a wedding cake, three tiers that is all carrot cake. I would like to use the cream chees buttercream for the taste. Is it to risky with the fondant?

I'd appreciate any help I can get.

Thanks

Anne

I've used cream cheese under fondant. If the icing has crusted, spritz water on the icing before attaching the fondant so it will stick.

I wonder this also...and can you use a regular frosting thickness of frosting, or do you just want to crumb coat it? ( did that make sence?)

You will get different responses on this. I do mine like I'm icing a buttercream cake so if people do not like fondant, they still have a regular coat of icing on their cake.
