Help!! Whipped Icing Recipe

I just got a call from a Dr. I use to work for requesting a cake for her daughters Birthday for this Saturday icon_surprised.gificon_surprised.gif .... I almost choked when she told me she needed it, but calmly said I can do it..... She went on to ask me if I could make the Whipped Icing like Walmart icon_wink.gif I said I think I can work that in for you - all while I was thinking where am I going to get that recipe... I have never done this before. I had made a Maxine cake for my old boss at this Peds Clinic and she saw it and was amazed icon_biggrin.gif I actually felt pretty good when she called and told me that... This would be my 3rd paid order and feeling pretty good since someone has called to place a order from seeing one of my cakes... I'm hoping someone will save me with a good Whipped Icing recipe that smoothes and pipes well icon_smile.gif Also do you think I should charge her extra for such short notice and what would be reasonable? Any and all replies are appreciated!

There is recipe on this site called whipped cream buttercream sorry I haven't tried it yet but others have said good things about it.

Instead of using 2 1/2 cups of Crisco, I use 1 cup butter and 1 1/2 cups Crisco. I could just sit and eat this stuff by the spoonfuls!!! tapedshut.gif

Another post was from someone who just purchased the frosting directly from WalMart/Sam's Club. You could always do that if she wants that exact frosting.

I just used the Whipped Cream Buttercream recipe for the first time on some cupcakes I made (see my photos) and I don't think I'll use it again. I think it would be very hard to get smooth on a cake - I've seen that comment before about this recipe. And I don't usually have "hot hands" but I found that I like stiffer icing for piping (my cookie monster fur kept getting mushy so I had to stop/refridgerate/start again a lot). Also, even thought I put boiling water in and mixed the specified time, I must have still had little grains of granulated sugar that didn't melt and it kept clogging my grass tip. Very frustrating at 11 PM while I was trying to finish.

adams2shop's suggestion to purchase the frosting direct since it is the customer's request anyway sounds like a great option for you!

Okay, I made the icing and I have to say I love it. It's not an icing that you can make perfectly smooth but you can smooth it somewhat. Mine was smoother until I kept messing with my flowers (taking them on and off icon_wink.gif )
Here's the cake I made it for. Nothing special. My sister is having a tupperware party and I had just gotten the heart pan and thought I'd try it out.
This cake is a yellow cake with strawberry filling and some royal flowers I had left over from my class 2 course.
I really like the taste of this icing. Much less sweeter than buttercream.

HI Diane!!! Your cake looks awesome!! What I do to get the frosting super smooth is the hot spatula method. Bring a pot of water to boil, dip your spatula in the hot water and wipe off the excess water with a cloth. Then smooth...it works like a charm! thumbs_up.gif

Thanks everyone for the repsonses... I didn't get any notice that I had gotten any replies from this thread... So sorry!!!! I've been saved from having to use the Whipped Cream Icing... She said she liked the buttercream I put on the Maxine cake...... I will try the icing though, it really sounds good! Denise2434 & Momof3boys I'm with you both regarding the kids driving you batty!!!!! I've got boy/girls twins just turned 4 and they fuss from the time their eyes open till they close at night....I'm always having to tell them to stop Fussing with each other.... Between working full time and trying and I mean trying to bakes cakes on the side I don't know where I find the time for anything..... I was out till 1030 last night watering my trees since we are having a heat wave, and then I came in to bake cupcakes for a CCC due Friday.... I'm so thankful for this site, I just wish I could stay off of it for more than 5 minutes icon_lol.gificon_lol.gif My boss would have a small Aneurysm if she knew how much I get on this site icon_biggrin.gif Have a great day!!!!

Denise2434, can you use the paper towel method to smooth this icing??? Also, have you made this icing into chocolate icing? If so, how??

Hey Petunia!!

If you will use the 1 extra tablespoon of meringue powder called for in the recipe, it will slightly crust. I have just used the hot spatula method on it. You might want to pm debsuewoo...she submitted the recipe and she could probably tell you about the chocolate. I would love to know too. I really love this recipe.
