i'm planning to bake and freeze 2 sponge cakes. i want them moist so i've made a simple syrup to brush on each layer. the thing that i'm confused is when do i put the syrup, before i freeze the cakes or after i thawed them?

I do it after they are partially thawed and I am building the cake. I like to work with the cakes still very cold. But I would def. do it after just to make sure it is extra moist.

I'd do them after thawing the cake when I'm filling it.

I brush flavored simple syrup onto my cake layers after they have cooled completely and I have cut the tops off for leveling. Then I wrap and freeze. They are always moist and flavorful.

i just tried this for the first time last night. the cake will be eaten today, so i hope it really is as moist as i am expecting!

aminaz- i just dipped a pastry brush into the syrup, shook it a little to get the excess off, and brushed it on. i've read that too much syrup will make the cake soggy, so i just moistened it, not drenched it.
