I made these for the first time a couple of days ago using the recipe on this site. When I rolled out the dough it kept cracking and I had to keep pulling it back together so I would get a nice smooth cookie. I followed the exact recipe - so what did I do wrong? Also, how long will this dough keep fresh in the fridge?

If the dough is cracking it usually means it is too dry. Try adding a little more liquid next time. I usually keep dough no more than a week in the frig. If is will be longer, I freeze it.
