How Far Ahead Can I Do A Fbct?

I plan on doing a cupcake cake for a b-day party tomorrow (Wednesday) at 1PM. I was wondering if I started working on it this afternoon if it would be okay to keep it in the freezer until tomorrow morning/afternoon when I put it on the cake?

I did one 4 days in advance and it was fine. I don't know the official correct answer, but that's from my experience.

I left mine in the freezer overnight and it had a little of the freezer burn taste. So I would say to make sure it's in a container of some kind if your're gonna keep it in for longer than a couple hours. HTH, Kristen

I have made them about 2 weeks before I needed. Let get frozen then move into a container until needed. Also if made ahead of time make sure you have baking soda in freezer to keep order from FBT
